\r\n\t\t\t\t1848 Winery was founded by Yossi Shor in 2006 with the objective of making small quantities of handcrafted wines of the highest possible quality. He began his quest by planting new vineyards from 2000\/1 in the finest wine regions in Israel. Yossi Shor comes from a long line of winemakers.His family began making wine in the Old City of Jerusalem in 1848. Since then, generation after generation, they continued making wine. For him it is not a profession, but a way of life. Yossi Shor is the eighth generation of the winemaking family, and the labels of his wines honor the generations that came before.<\/h5>\n

By creating 1848 Winery, he has absorbed a wine culture and the family heritage whilst taking on board modern ideas and advanced state-of -the \u2013art technology in both vineyards and winery. The winery produces 250,000 bottles a year. 1848 Winery is one of the most interesting, innovative and high quality small wineries in Israel today.<\/h5>\n

Ilan Assouline<\/strong>\u00a0<\/span>is the winemaker of 1848 Winery. He was born in Paris, in France, growing up with a fascination about science and food. His family hailed from Algeria, with its long wine history. He made Aliyah to Israel with his family.<\/h5>\n
He studied Bio-Chemistry and Food Science in Israel. He thought that a career in winemaking would be the perfect profession to combine these two interests and decided to return to France to study oenology at the University of Bordeaux.<\/h5>\n

He graduated from Bordeaux, arguably the wine capital of the world. After this he gained valuable work experience in different regions of Bordeaux, including Pessac Leognan, Pomerol and Saint Emilion.<\/h5>\n
In 2011 he joined 1848 Winery as winemaker. He is a purist and classicist, and pays attention to the smallest details in vineyard and winery. He divides his time between vineyard, winery and family, with a humble professionalism and a hunger to continue learning.<\/h5>\n
